Mango Parfait Overnight Oats

The "auntie" in me bought 10 mangoes over the weekend (they were just at S$0.85 each from Giant!) and I was initially afraid that we wouldn't be able to eat them in time. However, inspired by my college friend's berries yoghurt parfait, I decided to make my own mango parfait overnight oats. I really loved how the colours blended together too!

Btw, you got to be an oats person first, before you like this! :)

Recipe
Yield: 4 servings

Ingredients
Oats layer
2/3 cups oats
1/2 cup milk
1/4 tsp vanilla extract
1/4 tsp cinnamon
1 tsp honey
140ml coconut yoghurt (I used Meiji brand)
Mango layer
1 1/2 medium sized mangoes
140ml mango yoghurt (I used Meiji brand)
Toppings
1/2 medium sized mango, cubed
walnuts (or any other nuts)
Directions
1. Mix all the ingredients for the "oats layer" in a bowl. Cover and store overnight to create the creamy thick texture.

Tip: If you want to create the layers in your parfait, you can't skip the overnight part! I tried using some oats that I just made just to experiemtn and the oats just sank into the mango puree!
 
2. Blend the ingredients for the "mango layer".

3. Pour and alternate the layers into your cup. Get creative and have fun.

4. Add toppings and you are ready to serve. So easy!
