Cute and Easy Hedgehog Cookies

If you love simple cookies just like my favourite 3-ingredient cookies (see recipe here) and want to spruce them up later, these super-cute hedgehog cookies are sure to delight. All you need is some melted chocolate and some almonds. Follow my easy instructions below and have fun! :)

Hedgehog Cookies
Ingredients
your ready-made butter cookies
baking chocolate (I use Nestle's real semi-sweet chocolate mini morsels)
almond bits (or any other crushed nuts)

Directions
1) Melt some baking chocolate in the microwave oven at Medium-High for 1 min. Alternatively, if you do not have a microwave oven, you can melt it over some hot boiling water (refer to pictures here). Stir the chocolate mixture so it's well melted.

2. Coat the round side of the cookie with melted chocolate. Use a butter knife to help you.

3. Immediately while the chocolate is still wet, pour almond bits generously over the cookie. Use your fingers to gently press the almonds in, so that they remain firmly stuck.

4. Using a toothpick, dip some chocolate gently on the cookie to form the eyes and nose.

5. Repeat for your remaining cookies and place on a cooling rack for an hour to let the chocolate on the cookies harden.

6. An hour later, they are ready to be served!
