Gluten-free Double Chocolate Almond Cake


I have been trying to cut down on desserts these days, but I really have a soft spot for this healthy Gluten-free Double Chocolate Almond Cake!

It tastes so richly indulgent (surprisingly filling!), yet doesn't contain "nasties" like refined sugar. In fact, no sugar was used at all. Only honey. 

Yes, this is one the reasons why I like baking. At least I can make sure that my family is eating well, while not "depriving" them the joy of eating. :) 

Gluten-free Double Chocolate Almond Cake baked in Airfryer
Adapted from @yumhealth. 

Ingredients:
(A)
▪️ 4 eggs
▪️ 120g honey
▪️ 1 tbs vanilla extract

(B)
▪️ 140g almond flour
▪️ 30g chocolate powder (I use Hershey's)
▪️ 1/2 tsp baking soda
▪️ 1/4 tsp salt
▪️ 50g chocolate chips

Directions:
1. Preheat.
Preheat airfryer at 150 degrees C for 5 minutes.

2. Mix.
Mix all (A) ingredients together.

3. Mix.
Mix all (B) ingredients together. Make a well in the centre.

4. Combine. 
Add (A) into (B). Fold and pour into a baking pan. 

5. Bake. 
Cover the pan with aluminium foil and poke some holes. Bake in airfryer at 150 degrees C for 20 minutes.

6. Check. 
Remove the foil. Check that the cake is fully baked using a toothpick. If it doesn't come out clean, continue baking for another 5 minutes.

▪️  Add almond toppings (optional). 
Do so while the cake is still warm. Spread a thin layer of Nutella and immediately pour toasted sliced almond over the cake.


Serve warm. I added ice cream to go with my cake. So good!

[Recipe] Chinese Pear and Longan Dessert Soup


Chinese pear and apricot kernels are traditionally known to be beneficial for respiratory health, and I really like how this recipe requires no added sugar at all.

This recipe is simple to prepare and can even be completed during lunch time when you work from home. I have included both the traditional boiling and pressure cooking timings - but of course if you have a pressure cooker too, just use that. It's much faster. Enjoy!


Chinese Pear and Longan Dessert Soup

Ingredients:
▪️ 2 pears, deseeded and diced
▪️ 20g apricot kernels
▪️ 40g red dates, deseeded and chopped
▪️ 40g dried longans
▪️ 2.4 litres water
▪️ 30g wolfberries

Directions:
1) Soak.
Soak apricot kernels in hot water for 30 minutes to soften it.

2) Add.
Add all the ingredients except the wolfberries into a pot.

3) Cook.
▪️Boil: Boil for 30 minutes until the pear is soft.
▪️Pressure cooker: Cook on HI for 10 minutes and do a natural release.

4) Add.
Add wolfberries. Stir. Serve hot.

[Recipe] Garlic Lemon Prawns using Airfryer


Prawns are a good source of proteins, although I have to admit that I try not to have them too often because of their high cholesterol content.

Whenever I have these, I make sure that I buy the freshest so they are worth my calories (or rather, cholesterol)! Featured here are Spencer Gulf King Prawns from Grand Hyatt Singapore's The Marketplace, but I am sure you can get fresh ones at your nearby wet market too.

These garlic lemon prawns are really easy to cook and I especially love the intense garlic flavours just when I open the airfryer lid. So good! :)


Garlic Lemon Prawns using Airfryer
Serves 2

Ingredients
6 prawns
2 garlic cloves, chopped
1 fresh rosemary sprig, chopped
1 tsp mixed dried herbs
1 tsp olive oil
1 slice of lemon
Salt and pepper to taste

Directions

1) Prepare.
Remove the head and black vein (intestine). Use kitchen scissors to snip off the legs.

2) Marinate.
In a bowl, mix the garlic, herbs, oil, lemon, salt and pepper. Rub the prawns with the marinates and store in fridge for at least 1 hour.

3) Preheat.
When you are ready to cook, preheat the airfryer at 180 degrees Celcius for 5 minutes.

4) Airfry.
Cook in airfryer at 180 degrees Celcius for 8 minutes. Flip over to check that they are cooked well.

Serve hot and enjoy!

And so, we invited our extended family over for a wonderful homecooked dinner of Roaring Forties Lamb Rack, Yulgilbar Cattle Farm Prime Rib Beef, Pork Chorizo and Spencer Gulf King Prawns, Weeds & More Organic Vegetables and a Strawberry Cheesecake from Grand Hyatt Singapore.

Culinary Adventure

We got our raw ingredients from The Grand Marketplace, the hotel's one-stop online grocery shop offering premium ingredients from around the world, and that set off my culinary adventure for the day. 

The hotel offers ingredients from sustainable sources, and that means that the meat come from carbon-neutral farms and are butchered using energy-saving methods. 

The items are at surprisingly affordable wholesale prices, as the hotel passes on its savings from bulk purchases to customers. Some wines are at even up to 70% off retail prices!

Most importantly, I like how fresh the premium meat, seafood and veggies are. As they are also served at its restaurants (mezza9 and Oasis), that's as good as having a restaurant meal at home!

[Recipe] Lamb Rack with Garlic and Mixed Herbs Using Airfryer


For days that we want something special yet fast for dinner, Lamb Rack is a good option. Using the airfryer, the meat turns out really tender and juicy, and this dish is really quick to execute. 

The lamb rack featured here is from The Grand Marketplace by Grand Hyatt Singapore. The hotel offers high-quality and sustainable produce that is served at its restaurants - Mezza9 and Oasis - and these are actually at very affordable trade prices! So now, we can also prepare hotel-quality dishes in the comfort of our homes. :)


Lamb Rack with Garlic and Mixed Herbs

Recipe (1 serving)

Ingredients:
350g lamb rack
1 tbs olive oil
1 garlic clove, minced
1 tbs mixed dried herbs
1 fresh rosemary sprig, chopped (optional)
Salt and pepper, to taste

Directions:
1) In a small bowl, mix the oil, garlic, herbs, salt and pepper together. Pat dry the lamb rack and rub the marinate on the lamb. Refrigerate the marinated meat for a few hours.

2) 30 minutes before cooking, place the lamb out in room temperature.

3) Preheat airfryer at 180 degrees C for 5 minutes.

4) Airfry at 180 degrees C for 7 minutes. Open lid and flip food around to check for doneness. Cook for a few minutes more if required.

Serve hot, and pair this with a glass of red wine! Optional: 
  • Featured here is also some Spanish Chorizo bratwurst sausages which I cooked along with the lamb rack. It was cooked in exactly the same settings - airfried at 180 degrees C for 7 minutes. 
  • I also made a Rosemary Yogurt dip to go with the lamb. Just add some fresh lemon juice and a fresh rosemary sprig to some Greek yogurt, and mix well.

[Recipe] Red Dates and Longan Cake Using Airfryer


The red dates and dried longan, as star ingredients, lend a very Oriental feel to the entire cake. As such, I have chosen this to be my latest Chinese New Year-themed recipe. I usually bake a cake for my parents for CNY because of its significance (the 糕 in 蛋糕 sounds like 步步"高"升). What do you usually give them when you visit them to 拜年?
 
I like how moist this cake is and this is overall an easy recipe. The sugar level has been reduced, so don't worry about the calories if you are eating this with your festive snacks. 😜

Red Dates and Longan Cake Using Airfryer 
Yield: 1 loaf cake (6.5 X 3 X 3 inches)

Ingredients
(A) Dry ingredients
40g cake flour/ top flour
90g almond flour
1/2 tsp baking powder

(B) Wet ingredients
100g butter, softened
65g caster sugar
2 eggs

(C) Others
30g red dates, deseeded
20g dried longans

Directions
1) Preheat.
Preheat airfryer at 160 degrees Celcius for 5 minutes.

2) Combine.
Combine the dry ingredients together.

3) Combine.
Beat butter and sugar together. Mix the eggs in, one at a time.

Tips: The mixture may curdle, don't worry it's okay.

4) Chop.
Chop all the red dates (except 3 pieces) and dried longans into small pieces. For the last 3 red dates, half it.

5) Combine.
Make a well in the centre of the dry ingredients. Add the wet ingredients, red dates and dried longans (except the 6 pieces of red dates that were halved). Fold the mixture until just combined.

Tips: Do not overmix.

6) Pour.
Pour the batter into the baking pan. Place the remaining 6 pieces of red dates on top for decoration.

7) Bake.
Cover the pan with aluminium foil and poke some holes. Bake in airfryer at 160 degrees Celcius for 30 minutes.

8) Check.
When ready, open the foil and use a toothpick to check for doneness. With the foil removed, continue baking the cake for another 5 minutes so that the cake can achieve a golden-brown colour.

[Review] OurPasar Essentials: An Online Halal Grocer that Meets your Daily Needs


In the past year, many of us have turned to online retailers and service providers to avoid crowds due to the pandemic. In one way or another, we have/ have heard of friends who have become e-experts overnight - from buying online groceries to attending classes via ZOOM.

I was recently introduced to OurPasar, an online halal grocer which sells a wide range of produce such as meat, poultry, seafood and vegetables.

I tried their service to deliver 1 kg of Frozen Sirloin to my home. Here's my review:

1) Careful Packaging
My item was delivered in a clean new styrofoam box to retain temperatures and the raw beef was fully submerged in ice. The beef was still kept frozen (and not half thawed), so thumbs up for that!

2) Packed Fresh
The beef I purchased was frozen so I had expected it to have been at least a few months old. Surprisingly, my sirloin was just packed the day before.

OurPasar's goal is to keep its produce fresh by shortening the gap between food producers to end consumers. It tightly controls the supply chain and keeps processes efficient to ensure sustained quality and freshness of the produce from farm to table.

3) Reasonable Price
OurPasar's price is comparable to supermarkets and wet markets. For instance, their vegetables are less than S$2.50 and the sirloin I had was is at S$15/kg (U.P. S$17).
