[Recipe] Matcha and Adzuki Red Bean Loaf Cake using Airfryer


Since everyone's going to be at home for the next few weeks, here's another recipe for y'all!

Matcha always goes well with adzuki red beans, so let's bake one such loaf cake for tea time. It is moist and has slightly bitter tinges of matcha. Love it.

I made this cake using Craft Tea Fox's Barista Uji Matcha Powder. Air-flown from Uji Kyoto, these are 100% pure matcha so I don’t have to worry about additives like sugar or preservatives affecting my cake. I use this matcha powder for my own homemade Iced Matcha Latte with Honey too. Pure Hojicha powder is also available from Craft Tea Fox.


Matcha and Adzuki Red Bean Loaf Cake using Airfryer

Ingredients

(A)
▪️ 2 tbs matcha powder
▪️ 140g top flour/ cake flour
▪️ 1 tsp baking powder
▪️ 1/4 tsp salt

(B)
▪️ 60g oil
▪️ 120g sugar
▪️ 120g milk
▪️ 2 eggs
▪️ 1 tsp vanilla extract
▪️1 tin of ready-cooked adzuki beans (drained)

Directions
1) Combine all (A) ingredients together. Sift and place them in a bowl.

2) In another bowl, cream oil and sugar together. Add the remaining (B) together and mix well.

3) Add (B) into (A). Mix well and pour into a baking pan. Cover with aluminium foil and poke some holes.

Tips: The batter is supposed to be quite runny. Don't worry.

4) Bake in airfryer at 160 degrees C for 30 minutes.

5) Remove the foil. Check that the cake is fully baked using a toothpick. If it doesn't come out clean, continue baking for another 5 minutes.

[Review] Kroffle Buffet at Walking on Sunshine Cafe


Waking up early on a weekend morning has never been my thing. But after learning that Walking on Sunshine Cafe offers an All-You-Can-Eat Kroffle Buffet at only S$14.90++, we thought... why not?

The Deal at S$14.90++
Kroffles refer to croissant-waffles. Made by cooking croissant dough on a waffle pan to take the shape of a waffle, this pastry base takes on the taste profile and texture of a croissant.

Popularized in Korea, the kroffle is the latest cafe staple that instantly became cafe goers’ favorite food item because it goes perfectly well with their go-to cafe drinks.

Available daily from 9 to 11am on the buffet menu are the following kroffles:
  1. Chocolate
  2. Lime-avocado
  3. Mixed Berries
  4. Cinnamon
  5. Honey-mustard & Cream Cheese
  6. Corn-cheese
  7. Bacon-mash Potato
  8. Garlic & Cream Cheese

Review
We were advised to order four kroffles at one go, as they should be eaten warm.

For a start, we picked the four savouries (items #5 to #8 on the menu).

The Garlic & Cream Cheese was a clear winner for both of us due to the generous servings of crispy garlic chips.

We next proceeded to the desserts, and we liked the Cinnamon and Mixed Berries ones most. Somehow, I still associate waffles with something sweet.

Overall, the croissant dough gave an interesting buttery flaky texture to the usual waffles. Admittedly, having numerous kroffles in one meal may be a bit one-dimensional, so add on a coffee or a smoothie to go with the buffet.

As this cafe boosts Korean origins, he had the Ginseng Smoothie (S$13++) which turned out really well. It provided an energising morning boost, yet was not caffeine-based.

Ambience
Something noteworthy about this cafe is its garden feel. Great for those who like to take photos!

The plants and greenery offered a relaxing feel and I really appreciated that on a carefree weekend.

Overall
The kroffle buffet provides a good alternative for those who prefer a more value-for-money brunch experience. After all, a brunch dish (e.g. eggs benedict) at any cafe would easily set you back by S$20 already.

The 2-hour seating and ambience also allow you to slowly have your food and drinks, while catching up with friends.

Kroffles are available ala carte at S$6.90 per piece.

Gluten-free Double Chocolate Almond Cake


I have been trying to cut down on desserts these days, but I really have a soft spot for this healthy Gluten-free Double Chocolate Almond Cake!

It tastes so richly indulgent (surprisingly filling!), yet doesn't contain "nasties" like refined sugar. In fact, no sugar was used at all. Only honey. 

Yes, this is one the reasons why I like baking. At least I can make sure that my family is eating well, while not "depriving" them the joy of eating. :) 

Gluten-free Double Chocolate Almond Cake baked in Airfryer
Adapted from @yumhealth. 

Ingredients:
(A)
▪️ 4 eggs
▪️ 120g honey
▪️ 1 tbs vanilla extract

(B)
▪️ 140g almond flour
▪️ 30g chocolate powder (I use Hershey's)
▪️ 1/2 tsp baking soda
▪️ 1/4 tsp salt
▪️ 50g chocolate chips

Directions:
1. Preheat.
Preheat airfryer at 150 degrees C for 5 minutes.

2. Mix.
Mix all (A) ingredients together.

3. Mix.
Mix all (B) ingredients together. Make a well in the centre.

4. Combine. 
Add (A) into (B). Fold and pour into a baking pan. 

5. Bake. 
Cover the pan with aluminium foil and poke some holes. Bake in airfryer at 150 degrees C for 20 minutes.

6. Check. 
Remove the foil. Check that the cake is fully baked using a toothpick. If it doesn't come out clean, continue baking for another 5 minutes.

▪️  Add almond toppings (optional). 
Do so while the cake is still warm. Spread a thin layer of Nutella and immediately pour toasted sliced almond over the cake.


Serve warm. I added ice cream to go with my cake. So good!

[Recipe] Chinese Pear and Longan Dessert Soup


Chinese pear and apricot kernels are traditionally known to be beneficial for respiratory health, and I really like how this recipe requires no added sugar at all.

This recipe is simple to prepare and can even be completed during lunch time when you work from home. I have included both the traditional boiling and pressure cooking timings - but of course if you have a pressure cooker too, just use that. It's much faster. Enjoy!


Chinese Pear and Longan Dessert Soup

Ingredients:
▪️ 2 pears, deseeded and diced
▪️ 20g apricot kernels
▪️ 40g red dates, deseeded and chopped
▪️ 40g dried longans
▪️ 2.4 litres water
▪️ 30g wolfberries

Directions:
1) Soak.
Soak apricot kernels in hot water for 30 minutes to soften it.

2) Add.
Add all the ingredients except the wolfberries into a pot.

3) Cook.
▪️Boil: Boil for 30 minutes until the pear is soft.
▪️Pressure cooker: Cook on HI for 10 minutes and do a natural release.

4) Add.
Add wolfberries. Stir. Serve hot.

[Recipe] Garlic Lemon Prawns using Airfryer


Prawns are a good source of proteins, although I have to admit that I try not to have them too often because of their high cholesterol content.

Whenever I have these, I make sure that I buy the freshest so they are worth my calories (or rather, cholesterol)! Featured here are Spencer Gulf King Prawns from Grand Hyatt Singapore's The Marketplace, but I am sure you can get fresh ones at your nearby wet market too.

These garlic lemon prawns are really easy to cook and I especially love the intense garlic flavours just when I open the airfryer lid. So good! :)


Garlic Lemon Prawns using Airfryer
Serves 2

Ingredients
6 prawns
2 garlic cloves, chopped
1 fresh rosemary sprig, chopped
1 tsp mixed dried herbs
1 tsp olive oil
1 slice of lemon
Salt and pepper to taste

Directions

1) Prepare.
Remove the head and black vein (intestine). Use kitchen scissors to snip off the legs.

2) Marinate.
In a bowl, mix the garlic, herbs, oil, lemon, salt and pepper. Rub the prawns with the marinates and store in fridge for at least 1 hour.

3) Preheat.
When you are ready to cook, preheat the airfryer at 180 degrees Celcius for 5 minutes.

4) Airfry.
Cook in airfryer at 180 degrees Celcius for 8 minutes. Flip over to check that they are cooked well.

Serve hot and enjoy!

Dinner with the Extended Family


And so, we invited our extended family over for a wonderful homecooked dinner of Roaring Forties Lamb Rack, Yulgilbar Cattle Farm Prime Rib Beef, Pork Chorizo and Spencer Gulf King Prawns, Weeds & More Organic Vegetables and a Strawberry Cheesecake from Grand Hyatt Singapore.

Culinary Adventure

We got our raw ingredients from The Grand Marketplace, the hotel's one-stop online grocery shop offering premium ingredients from around the world, and that set off my culinary adventure for the day. 

The hotel offers ingredients from sustainable sources, and that means that the meat come from carbon-neutral farms and are butchered using energy-saving methods. 

The items are at surprisingly affordable wholesale prices, as the hotel passes on its savings from bulk purchases to customers. Some wines are at even up to 70% off retail prices!

Most importantly, I like how fresh the premium meat, seafood and veggies are. As they are also served at its restaurants (mezza9 and Oasis), that's as good as having a restaurant meal at home!

[Recipe] Lamb Rack with Garlic and Mixed Herbs Using Airfryer


For days that we want something special yet fast for dinner, Lamb Rack is a good option. Using the airfryer, the meat turns out really tender and juicy, and this dish is really quick to execute. 

The lamb rack featured here is from The Grand Marketplace by Grand Hyatt Singapore. The hotel offers high-quality and sustainable produce that is served at its restaurants - Mezza9 and Oasis - and these are actually at very affordable trade prices! So now, we can also prepare hotel-quality dishes in the comfort of our homes. :)


Lamb Rack with Garlic and Mixed Herbs

Recipe (1 serving)

Ingredients:
350g lamb rack
1 tbs olive oil
1 garlic clove, minced
1 tbs mixed dried herbs
1 fresh rosemary sprig, chopped (optional)
Salt and pepper, to taste

Directions:
1) In a small bowl, mix the oil, garlic, herbs, salt and pepper together. Pat dry the lamb rack and rub the marinate on the lamb. Refrigerate the marinated meat for a few hours.

2) 30 minutes before cooking, place the lamb out in room temperature.

3) Preheat airfryer at 180 degrees C for 5 minutes.

4) Airfry at 180 degrees C for 7 minutes. Open lid and flip food around to check for doneness. Cook for a few minutes more if required.

Serve hot, and pair this with a glass of red wine! Optional: 
  • Featured here is also some Spanish Chorizo bratwurst sausages which I cooked along with the lamb rack. It was cooked in exactly the same settings - airfried at 180 degrees C for 7 minutes. 
  • I also made a Rosemary Yogurt dip to go with the lamb. Just add some fresh lemon juice and a fresh rosemary sprig to some Greek yogurt, and mix well.
