Eggs in Potato-Cheese Boat using Airfryer

I wanted to make a happy, healthy and pretty breakfast dish over this long Vesak Day weekend. With 3 ingredients (eggs, potato, grated cheese), I came up with this fun dish using the airfryer: eggs in potato-cheese boat! 

So here's my recipe. Instead of scrambled egg fillings in the boat, feel free to make sunny side-up or mashed boiled egg. You can add even avocados for an even healthier dish. Have fun!


Potato-Cheese Boat Recipe
Yield: 5 potato boats

Ingredients
2 medium-sized potatoes
grated cheese
1 to 2 tsp oil
salt and pepper to season

Directions
1. Preheat airfryer at 200 degrees for 5 min.

2. Using a potato peeler, slice the potato into thin pieces. 

3. Add seasoning and oil. Mix well. (The oil also ensures that the potato slices don't fly around the airfryer in Step #5).

4. Brush oil on the sides of the ramekins (or small bowls). Arrange the potato slices into an open-nest shape. 

Tips: Ensure that there are no gaps, as you don't want the eggs to fall through later.

5. Airfry at 200 degrees for 7 min, until it is lightly brown.

6. Open the airfryer basket. Add the grated cheese into the potato-boats. Airfry at 170 degrees for 3 min to melt the cheese and seal the potato together.

7. Cool the ramekins. Using a knife, gently scrape the sides of the bowl to release the boat from the bowl.

I used 4 eggs to fill 5 potato-boats. 


Final steps
Arrange the eggs into the potato-boat. You are ready to serve! :)

This potato cheese boat was made by my really good friend, Estelle using airfryer! 
The paprika seasoning makes it look oh-so-yummy.
