[Review] Monti Singapore: Monti Festino Sunday Brunch at The Fullerton Pavilion

Monti Singapore, Marina Bay’s latest dining and lifestyle destination, has just introduced a whole new Sunday brunch by the bay concept.


Located at the iconic Fullerton Pavilion, this dining establishment offers stunning views of the Marina Bay and its surroundings and a fabulous menu to match. Get ready for a slow and relaxing afternoon of extensive Italian fare in à la carte buffet style from 12 to 3pm. If you love music and jazz, stay on for the live music all the way until midnight. No wonder it has been called Singapore's longest brunch!

Cold Seafood Platter
The buffet offers a generous Cold Seafood Platter on ice. Be tantalized by a smorgasbord of Alaskan king crabs, cooked tiger prawns, fine de claire oysters, seared tuna with sesame and yuzu, and mussels. Try them with either the prawn-based cocktail gamberi sauce or lemon sauces.

Salad Station
If the above is already making you feel a little sinful, help yourself to some greens first.

But don't stop there. Remember to start placing your orders from the extensive à la carte buffet menu!

Eggs
No brunch would be complete without a selection of eggs made in an omelette, Benedict or Florentine style.

If you order the Eggs Benedict - served complete with bacon and thick toast, and creamy Hollandaise sauce - watch in sheer delight the runny yolks oozing out with the touch of the fork.

Risotto and Pastas
Do look out for the Risotto Live Station, one of the highlights of the brunch, offering Truffle Risotto.

Watch the chef starting the fire with white wine, cooking the risotto in a parmesan cheese wheel, and then adding the finishing touches of black truffle and black pepper.

The risotto has strong intense flavours, thanks to the addition of the truffle and artisan cheese. It is a must try and should not be missed. Regretfully, the waiting time for the risotto to be served was rather long as many diners ordered this wonderful risotto topped with this heavenly truffle and cheese combination.
  
Meat
A good variety of meats were also available. In particular, we would highly recommend the Pan-cooked Foie Gras on Toast and Balsamic Reduction for its soft, creamy and melt-in-the mouth texture. The Charcoal-grilled Iberico Pork Jowl was thinly-sliced, succulent and flavourful - another of the must-try items as well.

Seafood
For seafood lovers, if you are not yet already satisfied by the huge seafood on ice platter served earlier, be awed by the Prawn Bowl, Slow-cooked Salmon Fillet and Seabream with Saffron Sauce. Served with couscous, the seafood not only offers variety but caters to the health conscious too.

Cheese Platter
The cheese platter is also available on the à la carte buffet menu, and we would recommend that you request for a bit of everything. Sample on the various cheeses with mild and stronger flavours, while watching the waves at the Marina Bay front.  

Particularly memorable were the Truffle Pecorino, a type of Italian sheep cheese with truffle undertones, and the Stracciatella. The stracciatella, a type of Italian buffalo cheese, was delightfully soft and creamy - my favourite amongst the range on the platter.

Dessert Cove
To round off a relaxed, hearty meal, a fine selection of desserts are available, ranging from Chocolate Torte, Mango Panna Cotta, Peanut Cream Cheese Tartlets, Tiramisu, Zabaglione Shooters to Lemon Rosemary Tartlets.

Drinks
A special feature of this Sunday Brunch is the first ever Amp Your Mojito and Make-Your-Own Bloody Mary drinks booth in Singapore. Feel like a suave mixologist as you prepare something creatively special for your partner.

Overall
Monti offers a laidback, lighthearted Sunday brunch with an unparallelled view to match. With a whole range of fine food available, we would recommend some "food planning" or sharing so that diners can have a try at all the dishes. (PS: We did not manage to try the pastas, soups and cold cuts!)
 
Monti, owned by the established 1-Group which houses other lifestyle brands such as 1-Altitude and 1-Rochester, is great for after-work drinks or a late night out at the beautiful jazz lounge and rooftop bar
