Eggs in Potato-Cheese Boat using Airfryer


I wanted to make a happy, healthy and pretty breakfast dish over this long Vesak Day weekend. With 3 ingredients (eggs, potato, grated cheese), I came up with this fun dish using the airfryer: eggs in potato-cheese boat! 

So here's my recipe. Instead of scrambled egg fillings in the boat, feel free to make sunny side-up or mashed boiled egg. You can add even avocados for an even healthier dish. Have fun!


Potato-Cheese Boat Recipe
Yield: 5 potato boats

Ingredients
2 medium-sized potatoes
grated cheese
1 to 2 tsp oil
salt and pepper to season

Directions
1. Preheat airfryer at 200 degrees for 5 min.

2. Using a potato peeler, slice the potato into thin pieces. 

3. Add seasoning and oil. Mix well. (The oil also ensures that the potato slices don't fly around the airfryer in Step #5).

4. Brush oil on the sides of the ramekins (or small bowls). Arrange the potato slices into an open-nest shape. 

Tips: Ensure that there are no gaps, as you don't want the eggs to fall through later.

5. Airfry at 200 degrees for 7 min, until it is lightly brown.

6. Open the airfryer basket. Add the grated cheese into the potato-boats. Airfry at 170 degrees for 3 min to melt the cheese and seal the potato together.

7. Cool the ramekins. Using a knife, gently scrape the sides of the bowl to release the boat from the bowl.

I used 4 eggs to fill 5 potato-boats. 


Final steps
Arrange the eggs into the potato-boat. You are ready to serve! :)

The paprika seasoning makes it look oh-so-yummy.

Healthy Japanese Tofu Omelette With Fresh Shimeji Mushrooms & Onion Using Airfryer


My mother-in-law wanted me to share a new healthy dish for dinner made using the airfryer and the immediate thought that crossed my mind was omelette. Eggs are cheap and high in protein (read more about the benefits here), but we often shun them because of the fear of high cholesterol. I strongly believe in eating in moderation, so if the family shares the dish together, that should be alright.

To make this healthier, I decided to have tofu, mushrooms and onions go along with the eggs. This vegetarian dish was indeed really nutrition packed: 
  • Tofu: Excellent sources of protein, iron and calcium
  • Shimeji mushrooms: Mushrooms are excellent ways of managing cholesterol, weight and diabetes. In addition, shimeji mushrooms have been shown to slow down/ treat cancers. 
  • Onions & garlic: While pungent, I have known them to be the herbal sources of managing anti-inflammatory conditions and simple flus.

Of course, feel free to replace the ingredients with anything you like. Have fun!


Recipe
Yield: 7-inch omelette

Ingredients
3 eggs
100g fresh shimeji mushrooms
1 tube Japanese silken tofu, sliced
1 garlic clove
1/4 onion
2 tsp oil
Salt and pepper to taste

Directions
1. Preheat the airfryer at 180 degrees for 5 min.

2. Cook the oil, garlic and onion at 180 degrees for 4 min. The oil will help to hold the ingredients down, so don't worry about them "flying".

3. Place the sliced tofu and mushrooms on the pan.

4. After seasoning the beaten egg, pour into the pan as well.

5. Airfry at 180 degrees for 25 min. Open every 6 - 8 min to poke and make sure that the inner layer of the egg is well-cooked.
Easy peasy. You are now ready to serve! :)

Btw, I like that I didn't have to wash another wok. I can just serve using the same pan that went into the airfryer. Yippee!

Scrambled Egg Using Airfryer


Saturday morning breakfast. Think scrambled eggs and Big Breakfast - and laziness. Here was my easy-peasy version.

Recipe
Yield: two sets of scrambled egg on toast

Ingredients
3 eggs
10g unsalted butter
pepper and salt to tast
 
Directions

1. Break the eggs. Whisk them.
 

2. Preheat airfryer at 140 degrees for 5 min. Drop the butter in a bowl. Place it in the preheated airfryer to melt it.

3. When the butter is melted, tilt the bowl all around to spread the butter out evenly around the base and sides.

4. Pour the beaten egg into the bowl. Set to 140 degrees Celcius for 10 min. If you would like other ingredients in your eggs, e.g. mushrooms, tomatoes, cheese, drop them in at this point.

5. Open the airfryer basket every few minutes to whisk continuously until the egg becomes fluffy and yellow. Most of the time, I prefer to have my eggs still runny. :) 

Tips: Make sure your airfryer is placed such that the basket can rest on the kitchen top if needed.


Do toast some bread and place the scrambled eggs on top. And here you have it - easy egg on toast with milk. Super yummy and nutritious!

 
Be creative. Add a tomato for a healthier dose!
